I feel like pancakes are a universal, everyone-loves-them, kind of food. For me, they remind me of my childhood, they’re a comfort food, and I make them whenever I’m having a crappy stressed out day.

Well I’m always trying out new pancake recipes that are healthier solutions. I mean, regular pancakes are delicious and all - but they leave you feeling sluggish, tired and bloated.

So when I discovered the laziest version of pancakes ever, using only two ingredients, annnnd they’re high in protein!?!? I was hooked! I made a batch and topped them with strawberries, banana slices and maple syrup. And guys these are sooo good! I wasn’t sure at first, but as soon as I added the toppings, I was happily surprised.

So how do you make them? Well, you just need one banana and two eggs. That’s it! Mash the banana in a bowl, whisk the eggs and mix everything together. Add the batter to your frying pan with melted oil (I use coconut oil - it’s perfect for frying) and flip after a minute or two.

I highly recommend you give these banana egg pancakes a try. They’re healthy, high in protein which will give you long lasting energy, and they’re kid-approved (my daughter gobbled them up and asked for seconds). Happy eating friends!

TWO-INGREDIENT BANANA PANCAKES RECIPE

INGREDIENTS

  • 2 eggs

  • 1 banana

  • Toppings of your choice (strawberries, banana slices, maple syrup etc)

INSTRUCTIONS

  1. Mash the banana with a fork. Set a side.

  2. Whisk together two eggs, add to the bowl of mashed banana, and stir together.

  3. Heat a skillet with coconut oil, then add the pancake batter. After about one or two minutes, flip with a spatula. Serve warm with your favorite toppings like berries and maple syrup. Store extra plain pancakes in the fridge for up to one week in an air-tight container.
