Roasted Garlic and Onion Mashed Potatoes

ROASTED GARLIC AND ONION MASHED POTATOES

INGREDIENTS
4 potatoes, peeled and quartered
1 whole garlic bulb
1 white onion, chopped
1/4 cup softened butter
1/4 cup sour cream
1/4 cup grated parmesan cheese
1/4 cup milk
salt and pepper to taste
INSTRUCTIONS
Preheat oven to 425F. Line a baking sheet with parchment paper.
Boil the potatoes: Add potatoes to a pot and cover with water. Bring to a boil, then reduce to simmer. Let cook until potatoes are soft when poked with a fork.
Roast garlic: Cut off the top of the garlic bulb, and remove the outer skin but keep the bulb in tact. Brush the top with oil, and wrap in aluminum foil. Bake for 30 minutes. Let cool and squeeze out garlic.
Sautee the onion: In a frying pan over medium high heat, cook the onion along with a little bit of oil until golden brown. Stir occasionally to avoid burning. Transfer to a food processor and puree.
Place potatoes, sautéed onion, and squeeze in the roasted garlic. Add in butter, sour cream, parmesan cheese, milk, salt and pepper. Blend everything together with an electric mixer until mashed potatoes are smooth and creamy.
